Description

Pale Ale based Vegetable Spiced Herb. Bring your own whip cream!

Ingredients

  • 8 lb 6 row
  • 1⁄2 lb 60 l crystal
  • 4 1⁄2 lb pumpkin
  • 1 lb brown sugar (15 min)
  • 1 oz czech saaz 6% aau (60 min)
  • 4 1⁄2 t ground nutmeg (15 min)
  • 4 1⁄2 t ground ginger (15 min)
  • 1 wlp 007 dry english
  • 9 t ground cinnamon (15 min)
  • 1⁄2 oz centennial 9.5% aau (60 min)
  • 1 whole vanilla bean (2ndary)

Instructions

Peel and shred fresh pumpkin, sprinkle with water, cover with alum foil and bake @350F for 1 - 1.5 Hrs. Add cooled pumpkin to mash. (I have not had good results with canned pumpkin).
Mash 15 mins @ 115F.
Mash 60 mins @ 148F.

Notes

Add vanilla bean to 2ndary.
You can also add more cinnamon stix to the 2ndary for more spice.
